Sous-vide Fusionchef equipment from Julabo" target="_blank" rel="noreferrer">Fusionchef]( by Julabo is a new line of sous-vide equipment promising highly precise temperature control with a stability of +/- 0.03°C. The new Pearl and Diamond circulators will clamp on to the four new stainless-steel baths - of 19 litres, 27 litres, 44 litres and 58 litres - or any other cooking pot.

The Pearl circulator has vapour-proof electronics, a safety protection grid to keep the vacuum pouch away from moving and heated parts, and a timer.

Additional features on the PC-controlled Diamond include three timers; preset temperature memory keys for fish, meat and vegetables; automatic calibration core temperature detection; and easy HACCP data logging.

Baths incorporate custom-fit, stainless-steel lids, front drains and stainless-steel bridges to hold the circulators in place.

The accessory line-up includes separation grids, timer tape with food-safe adhesive and iSi Gourmet clamps to fit 0.5 or 1 litre iSI Gourmet whips that allow chefs to prepare and keep sauces and foams at the right temperature ready for plating.
