It's the time of year when salad leaves take on an eye-catching bright green hue that will darken as the year progresses and Brakes's seasonal offering - Pauleys Spring Salad Mix - makes the most of this visual appeal. Available from the end of February to the end of May, the combination of washed and prepared leaves aims to save caterers time and effort in sourcing and preparing different types of lettuce.

The mix brings together eight leaves - biondi, fine frisee, baby spinach, mizuno, roquette, Apollo, lamb's leaf and coriander - which are good sources of dietary fibre vitamins A, B, C, K, and potassium, magnesium and calcium. The salad leaves are supplied in 250g bags each yielding five individual portions.
