Spuds for schools from Vale's Fresh

Vale's Fresh is a brand specialising in potatoes for the caterer and is part of Greenvale AP, the UK's largest supplier of fresh British-grown potatoes.

The company's portfolio includes chilled prepared potatoes - par-cooked, peeled whole potatoes - and fresh chips.

The prepared potatoes are uncut, graded to a maximum diameter of 45mm, and just need finishing off to serve - boiled, steamed or roasted. They are supplied in packs of 5kg or boxes containing five 2kg packs.

Vale's Fresh is also fielding a fresh chips range which, the company says, after cooking in independent tests, had absorbed up to 50% less fat than competitors' frozen, par-fried products. The fresh chips are made from British Maris Piper potatoes and have a shelf life of 10 days.

For best results the chips should be deep-fried for about five minutes. Alternatively, to save time at point of service, they can be blanched in the fryer, then fried off to order. They are available in pack sizes of 2.5kg, 5kg and 10kg.
