The all-stainless steel cream whipper produced by TW Mosa of Taiwan is now available in the UK through Catering and Leisure Supplies (CLS).
The whipper, which can convert one litre of whipping cream into three litres of fresh whipped cream in an instant, can be used for desserts, sauces and foams, or espumas - as popularised by three-Michelin-starred Spanish chef Ferran Adrià.
Caterers simply screw into the top of the whipper a small, disposable cartridge of nitrous oxide gas which emulsifies (or whips) the cream and propels it through the nozzle when required. The gas also acts as a natural antibiotic, extending the fridge life of the cream for as long as 10 days.
The whipper's silicone head-gasket seal is resistant to both high and low temperatures, making it suitable for both hot and cold preparations.
Available in one- or half-litre sizes, the whipper is dishwasher-safe and meets all food hygiene standards. It comes with a dispensing nozzle and cleaning brush, while the Cream Charger gas cartridges are sold separately.
CLS also supplies Adrià's specialist Texturas range, which includes the ingredients to make airs or foams, along with a choice of syrups that can be mixed with the cream to create simple desserts.
