Bernard Matthews Foodservice will be heralding the benefits of ‘leaning on' turkey at this year's ASSIST exhibition in Glasgow (Association of Service Solutions in Scotland).

The leading turkey supplier will, specifically, be presenting its Big Green Tick range, developed to help caterers develop menus which meet the food and nutrient based standards whilst appealing to kids.

The range's debut at ASSIST fits in nicely with the exhibition's ‘Open to Change' theme, showcasing turkey as an underexploited, versatile and cost-effective protein and the various options open to caterers looking to put turkey on their menus at the event at Glasgow's Caledonian University Refectory on August 30th.

"There are many selling points of British turkey1 that are stimulating uptake," said Duncan Marsh, general manager for Bernard Matthews Foodservice, which supplies quality British turkey products in its Big Green Tick range to UK schools and the general cost sector.

"One in four adults is cutting back on red meat for health reasons2, for instance, which may influence parents' decision to let their children have a school lunch. British turkey breast is a not only low in saturated fat, but is cheaper to buy, savings which can be passed on to parents."

Committed to helping school caterers make this idea a reality with products and recipes that help create menus which meet the food and nutrient based standards and ensure clean plates every time, the Big Green Tick turkey range, which is free from artificial colours, flavours, preservatives and hydrogenated vegetable oils (HVOs), includes a selection of ingredient products for use in global dishes as well as whole muscle roasts and traditional kids favourites.

Ideal for everything from spaghetti Bolognese to curries, Big Green Tick IQF Turkey Thigh Mince (4mm) and Diced Turkey Thigh (20-25mm cubes) contain, on average, significantly less saturated fat than lean beef*, and are made from fully traceable from farm to fork, turkey thigh, trimmed to remove excess fat and skin.

Staying with the global theme, schools can also lean on turkey to serve up an Asian-inspired Turkey Tikka Chapatti using ready-to-eat from defrosted Big Green Tick mild Tikka Turkey Breast Chunks and pizza topped with Big Green Tick Roast Turkey Breast Chunks, ingredient products that are low in saturated fat and perfect for use in fast casual favourites.

The Big Green Tick range also includes traditional favourites such as burgers and meatballs, which don't always have the best reputation when it comes to being healthy options.

Swapping the usual beef burgers for leaner turkey patties with wholemeal buns and salad toppings is the ideal way to give meals a healthier edge3, according to Mintel research, and Big Green Tick Turkey Burgers and Turkey Meatballs provide more scope for this.

Each product contains less than 10 percent of a child's guideline daily amount for fat, saturated fat and salt, and, as a leaner alternative to traditional beef burgers and meatballs, they are free from artificial colours, flavours, preservatives and HVOs.

In terms of Big Green Tick provenance, each bird is cared for on the company's own farms across Norfolk, Suffolk and Lincolnshire in line with the Farm Animal Welfare Council's ‘5 Freedoms, with each farm Quality British Turkey and Assured Foods (Red Tractor) certified, welcoming visits from Defra and independent welfare bodies.

Each bird is fed a nutritious cereal-based diet, the majority being wheat grown locally and prepared at our own mill near Kings Lynn for the highest quality and control, plus some of the lowest food miles in the industry.
