A trio of new ready-to-fill pastry shells from Pidy includes its first foray into fillo pastry, a crunchy but lighter and healthier option.
Each rich, buttery Fillo cup (pictured below) comprises six fine layers of pastry which can be filled with hot or cold fillings, such as salads, fruits and mincemeats, and retain their crunch for up to two hours after. The Mini and Large formats, packed 88 or 48 to the case, have a 12-month storage life.
Also new are Chocolate Trendy Shells made from an all-butter shortening which are sold in packs of 36, comprising 12 each of the triangular, square and circular shell shapes.
Mini Tulipe Cups are 5cm-diameter sugared waffle cups with a handmade rustic appearance and plain or chocolate linings that are both freeze-thaw-stable, so ice-cream and sorbet fillings can be prepared well in advance. The chocolate lining allows moist fillings to stand for hours without deforming the basket. Both are sold in packs of 70 which have an 18-month shelf life if stored between 10 and 25°C.
