Fifteen second-year catering students from <?xml:namespace prefix = st1 ns = "urn:schemas-microsoft-com:office:smarttags" /?>

WestminsterKingswayCollege](http://www.westking.ac.uk)have seen their own creations published in a new catering recipe book by [Alaska Seafood.](http://www.alaskaseafood.org.uk) The students, who learn about Alaska Seafood's sustainable fisheries management at college, were challenged to devise recipes using wild Alaskan salmon and cod and 15 finalists were chosen for a competition cook-off. The winning recipe, from Daniel Smith, was for Wild Alaska salmon with pea mousse, dill mayonnaise and quail's eggs. The 50-page book, [which can be viewed online, also features recipes from college chef lecturers José Souto and Norman Fu.
