With under-utilised species increasingly in demand, yellowtail amberjack is a sustainable product which relieves the pressure of over-fishing on more well-known species.
The fish is reared in on-shore hatcheries and then grown in off-shore sea cages in South Australia.
The pale pink flesh is sweet with a rich flavour and provides meaty fillets. With a clean flavour, optimal fat content, firm texture and high yield, yellowtail amberjack is popular in both Mediterranean and Japanese cuisine and offers versatility in both cooked and raw dishes.
