School wasn't really for me

Kitchen porter at the local pub

The Mariners in Rock, Cornwall
What's your favourite hotel?
The Pig near Bath. I lived there for three months during lockdown. It was pretty cool

Tequila margarita

I'm a sucker for fried chicken
Are there any foods/ingredients that you refuse to cook with?
I won't use lovage on my menus, I find it utterly repulsive in flavour and fragrance
Which person in catering have you most admired?
Angela Hartnett, she is a very impressive woman
Which person gave you the greatest inspiration?
Chris Cleghorn really got me into cooking seriously and inspired me to work hard and cook well
If not yourself, who would you rather have been?
Bear Grylls, very interesting chap
Describe your ultimate nightmare?
Somehow getting a used toilet brush in my mouth (you asked...)
