At the moment it's a Ginza Sour, a cocktail created by [Trivet sommelier] Isa Bal, featuring Suntory Toki whiskey and umeboshi

What is your favourite cuisine?

There are so many favourites but I think Italian cuisine takes the title

What is your favourite prepared product?

Fujicco salted shredded konbu. Absolute umami bomb

What flavour combinations do you detest?

Chocolate and raspberry

Which person in catering have you most admired?

Thomas Keller for his vision for his restaurant group and our industry as a whole

Cast away on a desert island, what luxury would you take?

Espresso machine

What daily newspaper/website do you read?

The National Hockey League app

If not yourself, who would you rather have been?

Valentino Rossi. I love motorbikes and nobody will ever be better at riding one than him

Describe your ultimate nightmare?

Being served a grilled banana dessert

Which ingredient do you hate the most?

Bananas

When and where was your last holiday?

2017 to Greece, Nafpaktos and Corfu

What irritates you most about the industry?

The overriding ‘over-worked/underpaid' mantra that runs through the majority of mainstream press articles about hospitality. Until we get past that we will continue to struggle to encourage people into our industry

LA Confidential

If you had more time, what would you do?

Build an outdoor ice rink and play hockey
