There are so many favourites but I think Italian cuisine takes the title

Fujicco salted shredded konbu. Absolute umami bomb

Chocolate and raspberry

Thomas Keller for his vision for his restaurant group and our industry as a whole

2017 to Greece, Nafpaktos and Corfu
What irritates you most about the industry?
The overriding ‘over-worked/underpaid' mantra that runs through the majority of mainstream press articles about hospitality. Until we get past that we will continue to struggle to encourage people into our industry
