What was your first job?
My first job was as a waiter in a five-star hotel in my hometown of Kolkata, India
What do you normally have for breakfast?
Black coffee and a cereal bar grab-and-go style, because I'm usually on my way out somewhere
What do you do to relax?
Music has always been my way out from any stresses
Which is your favourite restaurant?
There are quite a few contenders, but I frequently visit Chourangi in Marble Arch, London
What's your favourite hotel?
Any JW Marriott hotel
What is your favourite drink?
The Champagne pina colada from Coupette in London has to be the winner. It's a holiday in a glass
What do you always carry with you?
My laptop and notebook come everywhere with me
How would you describe your desk?
A big part of my life!
Which person in catering have you most admired?
My brother, Suman Mitra, who taught me everything I know regarding the industry
Cast away on a desert island, what luxury would you take?
Speakers or headphones – I couldn't survive a day without music
If you had not gone into catering, where do you think you would be now?
I would be an interior designer
Describe your ultimate nightmare?
Horror movies – I can't watch them!
When and where was your last holiday?
Spain in summer – we went to the Canary Islands
What irritates you most about the industry?
It can be a thankless job
What's your favourite film?
Very hard to tell, but my all-time favourite is a Bollywood movie called 3 Idiots
