What was your first job in catering?
A kitchen hand in a pub in Riwaka in New Zealand
What do you normally have for breakfast?
A coffee – flat white is my preference
What do you do to relax?
I like to go out with my friends for drinks and food. Nothing better than sitting round a table with good mates
Which is your favourite restaurant?
I don't have a favourite restaurant but I really enjoy open fire cooking. One of the best meals I've had was at Asador Etxebarri in northern Spain
What's your favourite hotel?
One of my all time favourites has to be the Ritz London
What is your favourite drink?
Always an Old Fashioned
Which ingredient do you hate the most?
Everything is delicious if cooked properly and with respect
Which person gave you the greatest inspiration?
The person I admire most in the culinary world is Rob Weston. He's an amazing cook and completely uncompromising in what he does. The greatest inspiration in my life has definitely been my mother
Describe your ultimate nightmare?
A 12pax table full of dietary requirements!
