Art

What was your first job?

I was 17 and on a Youth Training Scheme in a Mexican kitchen, Chimmy Chungas, on Great Western Road in Glasgow

What do you normally have for breakfast?

Black coffee

What do you do to relax?

I have three Weimaraner dogs, so I take them for walks out on the hills in Perthshire

Which is your favourite restaurant?

Per Se in New York

What's your favourite hotel?

The Waldorf Astoria in New York

What is your favourite drink?

Bourbon on the rocks – three ice cubes and a slice of lime

What is your favourite cuisine?

Grilled

Which ingredient do you refuse to cook with?

Table salt – I much prefer sea salt

Which person in catering have you most admired?

Raymond Blanc

Which person gave you the greatest inspiration?

Thomas Keller – he has taken the food scene on a long journey and he promotes local suppliers

Cast away on a desert island, what luxury would you take?

My three dogs

If you had not gone into catering, where do you think you would be now?

Gamekeeper

What irritates you most about the industry?

When developing younger chefs isn't a focus. I believe more effort should be put into this in every business

Kelly's Heroes or 13 Hours

Who would play "you" in a film about your life?

Brad Pitt

The French Laundry Cookbook
