Raymond Blanc's White Brasserie Company to open 17th pub

The White Brasserie Company is to open its 17th pub, the Boot in Histon, Cambridgeshire in February.

The 123-cover site will comprise of a bar, snug and dining space as well as a 62-cover outdoor space.

The seasonally changing menu will feature a range of classic British pub dishes as well as French brasserie favourites such as guinea fowl coq-au-vin with a medley of root vegetables, and wild mushroom and black truffle risotto.

The Boot in Histon has undergone renovation to enhance its original period features including original brick arches, beamed ceilings and an inglenook fireplace. A new restaurant area has also been constructed at the rear of the pub.

Brasserie Bar Co chief executive Mark Derry said: "We're looking forward to opening our 17th site in historic Histon. The pub is full of character and we have gone to great lengths to restore many of the original features in the building as well as creating an impressive new extension. We look forward to welcoming people into the pub towards the start of February."

The White Brasserie Company's pubs include the Barley Mow in Surrey, the Oakwood in Cheshire, the Jobber's Rest in Essex, and the Hare in London. It is the pub/restaurant brand of Brasserie Bar Co.

Raymond Blanc is among the directors of the business, overseeing the menu in partnership with executive chef Clive Fretwell.
