Thomas Hine has returned to the Seren Collection to oversee the kitchen at the group’s recently acquired hotel, Penmaenuchaf near Dolgellau in the Snowdonia National Park, as head chef.
Fred Clapperton is set to join the Seren Collection’s Coast restaurant later this year, having been head chef at the Michelin-starred Clock House for the past four years.
