Hand-held oil filter for
fast-food fryers

 

Food residues left in cooking oil carbonise and quickly break down the oil. The result is that the oil is absorbed into the food being fried, causing sogginess and bitter taste.

 

So great is this problem for high-volume fast-food chains that it is not uncommon to filter the oil more than once a day.

 

While very heavy-duty fryers come with built-in filtration systems, for most operators a manual system is the answer. Sumo Filtration Systems has launched a hand-held system which can filter while the oil is still at working temperature, cleaning a 30-litre batch of oil in four minutes.

 

The unit is stand-alone, using rechargeable batteries instead of mains power, and will clean six fryer tanks from one battery charging.
