Scotland's one-Michelin-starred Knockinaam Lodge in Portpartrick, Galloway, has been sold almost two years after its owners, husband-and-wife team Michael Bricker and Pauline Ashworth, put it on the market.
The new proprietors of the 10-bedroom restaurant with rooms are David and Sian Ibbotson, who both have a hotel background with Hilton. They took over the running of the property at the end of February and are believed to have paid close to the original asking price of £850,000.
"That includes a 550-bin wine list as well as all fixtures and fittings," confirmed Ibbotson. All the staff, including head chef Tony Pierce, are remaining with the business.
"We've had an ambition to run this type of hotel with a Michelin-starred restaurant, and would look to increase staffing if there was a necessity," said David. "At the moment it's quiet, so we're only seeking to replace the pastry chef vacancy we inherited."
The Ibbotsons plan to put about £100,000 into refurbishing the property, including the 35-seat restaurant, in the autumn, although David refused to be drawn on any ambitions for a second Michelin star. "We'll give Tony scope to progress the cooking and if we get the accolade that would be wonderful," he said.
Pierce commented: "It's exciting to have the chance to push the food forward. I'm keen to try for two stars." He plans to continue a five- or six-course tasting menu for £40.
