Know your onions

Cipolline Aceto Balsamico or baby Borretane onions dressed in balsamic vinegar, olive oil and fresh herbs, are the latest addition to iB Foods' vegetable dishes.

 

The baby Borretane onion is a flat-topped Italian onion with a sweeter taste than UK varieties.

 

They are about one inch tall and can be served hot or cold with a meat dish, such as iB Foods' Lamb or Pork Stincotto.

 

When caramelised in their own juices, they can be served with pan-fried duck breast or mixed lettuce leaves.
