Latest Convect-Air combi steamers from Germany's Kuppersbusch offer a wide range of facilities including DuoPerfect multi-point core temperature sensor, triple insulation glass door, pre-start function check and error code display, electro-magnetic ventilator valve and triple insulation glass door. A separate soft water connection is fitted and a permanent connection with a waste water system is possible.
There is also a built-in connection for energy optimization systems while the top-end 4000 series features an LCD colour monitor giving graphic representation of the cooking process and programmes controlled by direct or text selection. Ovens are made in 6, 10, 20 and 40 Gastronorm sizes, electric and gas.
Kuppersbusch claims to have pioneered many aspects of combi technology, launching a circulating air oven in 1973 and its first combi-steaming model in 1976 .
