HAWES TAKES OVER chair of DSO managers' GROUP

 

PETER Hawes last month took over as chairman of the Forum of Direct Service Organisation (DSO) Managers at its annual general meeting in Stratford-upon-Avon.

 

He replaced Paul King, former director of Clwyd Commercial Services, who has set up his own catering consultancy.

 

For the past four years Mr Hawes has been managing director of Norfolk County Services, which is the DSO for school meals, civic catering, meals on wheels, cleaning, grounds maintenance and printing.

 

TOP WAITER JOINS COPPID BEeCH

 

DIDIER Broquerault, former restaurant manager at Wentworth Golf Club in Surrey, has left to join the Coppid Beech Hotel in Bracknell, Berkshire, as food service manager.

 

Mr Broquerault, who won the Head Waiter of the Year title in 1992, takes over from Norbert Lieder, who has become food and beverage manager at Tewkesbury Park Hotel in Gloucestershire.

 

SEARCH FINDS ROLE IN GLASGOW

 

PHILIP Search is to take charge of the new 80-bedroom Glasgow Airport Travel Inn, when it opens in June.

 

Mr Search has worked with Whitbread for seven years, most recently as deputy manager at the 50-bedroom Edgwarebury Hotel in Elstree, Hertfordshire.

 

FLATTER REPLACED AT DORCHESTER

 

ZOE Jenkins is to take over in July as banqueting manager at the Dorchester hotel in London, following the sudden departure in February of Michael Flatter.

 

Ms Jenkins has been conference and banqueting director at London's Hotel Inter-Continental since June, prior to which she was the conference and banqueting manager at London's five-star Park Lane Hotel.

 

Mr Flatter this week joined London's Regent hotel as conference and banqueting manager. His predecessor, Graham Duncan, has been promoted to the post of director of sales for conferences and banqueting.

 

WHITTAKER IS NEW HILTON FINANCE VP

 

CHARLES Whittaker is to leave Scott's Hotels after 12 years to assume the new role of vice-president, finance, for Europe at Hilton International.

 

He is not being replaced at Scott's, where his duties as director of finance and business development will be shared between managing director Jan Hubrecht and financial controller Steven Palmer.

 

BARTON HEADS REvampED FAIRMILE

 

ANDREW Barton is the new manager of the Fairmile pub-restaurant in Cobham, Surrey, which has just reopened following a £2.2m refurbishment.

 

Mr Barton, previously manager of the Bridge Inn at Yatton near Weston-Super-Mare, will also be responsible for a 30-bedroom lodge which owner Premier House plans to build next to the pub.

 

The Fairmile, which had been closed for 10 years, becomes part of Premier's 70-strong chain of Miller's Kitchens.

 

ROUX WINNER HEADS FOR FRANCE

 

MERCY Fenton, winner of the 1994 Roux Diners Scholarship, is to spend three months in the kitchens of leading French chef Bernard Loiseau at la Résidence de la Côte d'Or, in Saulieu, as part of her prize.

 

Ms Fenton, from Morel's in Haslemere, Surrey, is the first female winner of the scholarship.

 

Runner up Darren Tidd from Cliveden, Berkshire, will spend a week at the Waterside Inn at Bray and another week at Le Gavroche in London.

Mark Hoyland to general manager of the Manor hotel, near Guildford in Surrey, from deputy general manager at the Copthorne Effingham Park Hotel near Gatwick.

 

Colin Bussey to P&O Cruises, as part of a five-strong team of on-board head chefs, from head chef at Gleneagles Hotel in Perthshire, where former sous chef Gordon Dochard has taken his place, working under executive chef Alan Hill.

 

Corinne Schurink to assistant manager at Flitwick Manor, Bedfordshire, from conference and banqueting manager at the Avila Beach Hotel in Curaáao.

 

Andrew Overton, general manager of the Marine Highland Hotel in Troon, has been appointed chairman of the Glasgow and West of Scotland branch of the HCIMA.

 

Anne Holt to training manager for Catering Direct, the direct service organisation for the Strathclyde region, from a similar position at the Boca Raton Resort in Florida.

 

Nigel Irving to senior recruitment consultant for the commercial catering division of London-based Portfolio International, from senior consultant at Berkeley Scott.

 

Angela Nottage to sales director at Heathrow's Excelsior and Forte Crest hotels, from incentives and conference sales manager, based at Forte's London office.

 

Spencer Yeo to sales manager for Audleys Wood Thistle Hotel, near Basingstoke, from a similar post at London's Hampshire hotel.

 

Vic Laws is the new chairman of the Society of Catering and Hotel Management Consultants.

 

David Johns to senior buyer for Forte's purchasing and supply unit, from national food buyer for Chef & Brewer.
