Stephen Carter, the executive chef at Rocco Forte Hotels-owned Brown's hotel in London, is to transfer to the group's Cardiff property. He will join St David's Hotel and Spa after the Easter break in a similar executive chef role.
Carter, who joined Brown's in October last year, will head a brigade of more than 20 chefs at the hotel. He will have responsibility for all its food outlets and operations, including banqueting and its fine-dining restaurant, Tides. Carter will join two former Brown's colleagues at St David's - general manager Jason Harding and resident manager Sally Rouse, who were respectively resident manager and sales and marketing director at Brown's.
Carter, 41, said: "In the past, I was always very nervous about moving away from London - but I've got over that now and I'm looking forward to working with a team that I began a relationship with at Brown's. We all got on really well and it's an exciting challenge".
Carter replaces Daniel James as St David's executive chef.
