Aciete martini with rosemary-infused tequila

For guests looking for a twist on a classic, this cocktail plays with sweet and savoury flavours

Tired of your usual gin or vodka martinis? This tipple, created by Liam Evans, the beverage director at CiCi’s bar, uses tequila with a herby infusion. The olive oil topping marries together that fresh flavour for a smooth finish.

 

Ingredients

50ml rosemary infused tequila

10ml Manzanilla sherry

2 dash orange bitters

1tsp high quality olive oil (we use OMED Smoked Olive oil)

 

For the rosemary infused tequila infused 3x sprigs of rosemary in per 700ml bottle for 5 hours

 

Method

  1. Add all ingredients apart from olive oil to the mixing glass.
  2. Stir with ice until diluted and chilled
  3. Strain into a cold coupe
  4. Float the olive oil on top of the drink.
