EggRun plans to open 15 restaurants over next three years

Egg-based fast-casual brand EggRun is to open its first permanent restaurant in London in 2021, with plans to launch 15 sites over the next three years.

Founders Laurent Manuel and Asher Grant set up the concept during the pandemic, offering a delivery-only menu from a site in Piccadilly.

Now the team have taken on the former Olive and Squash site on Fish Street Hill in Monument for their first restaurant, due to open in early March.

The venue will feature just 10 seats to eat-in and mainly offer grab-and-go.

Executive chef John Skotidas, who holds the same position at the Mazi and Suzi Tros restaurants in Notting Hill, has designed a menu which features scrambled eggs with caramelised onions, cheddar, chives and a ‘secret sauce'.

Burgers will include the likes of the New Yolker; a beef patty topped with a fried egg, caramelised onions, gherkins and tomato.

There are also vegan options, with substitutes for both eggs and cheese.

Manuel and Grant plan to open an initial three sites over the next 12 months alone.
