The Connaught’s executive pastry chef plans new London pâtisserie

Nicolas Rouzaud, executive pastry chef at the Connaught in London, is planning to open a new pâtisserie in London under his own brand.

 

The Toulouse-born chef trained with the Compagnons du Devoir and was based at Le Bristol Paris for seven years. He moved to London in 2015 and has since worked at the Lanesborough and now the Connaught, where he leads a team of 27.

 

Tomorrow (3 April) the Connaught Patisserie by Nicolas Rouzaud in London’s Mayfair will rebrand to Nicolas Rouzaud at the Connaught. To coincide with his new title as founder of Nicolas Rouzaud, Maison de Haute Pâtisserie, he will transition into a chef partner role at the hotel instead of remaining as executive pastry chef. 

 

As part of the rebrand, Rouzaud will look to serve more reduced-sugar desserts and collaborate frequently with luxury brands.

 

 

The chef is planning to open further pâtisseries in London and Paris, details of which will be announced later this year.

 

He has also recently launched pâtisseries in Qatar under his Maison de Haute Pâtisserie Nicolas Rouzaud brand at the Four Seasons Resort and Residences at the Pearl-Qatar and the Place Vendome luxury shopping mall.
