Alvin Leung to open restaurant in London

Alvin Leung, the two-Michelin-starred chef proprietor of Bo Innovation in Hong Kong, is to open a restaurant in London.

 

The self-taught chef, who is a former engineer and has only been cooking for eight years, will open Bo London in Mayfair in September.

 

Born in London and raised in Toronto, Leung said he had wanted to open a restaurant in the capital for years.

 

"I love the city and am frequently here. I think London offers one of the most diverse and exciting restaurant scenes in the world and I would really like Bo to be a part of that," he said.

 

Leung's "X-treme Chinese" cooking draws on influences of many international cuisines including French and Italian from the West; and Thai, Korean, Malaysian and Indian from the East. He also takes inspiration from the "masters", including Joël Robuchon, Alain Ducasse and Ferran Adrià.

 

Bo London will offer signature dishes from Hong Kong's Bo Innovation as well as brand new dishes created with a British inspiration.

 

Leung added: "I like to challenge people's expectations, to surprise and excite them. My aim is to have people say ‘that was the best meal I've ever had' and I just work backwards from that."
