Cooking at sea presents a unique set of problems, which the Ocean Series of combi-ovens from German maker Eloma is designed to combat.
Distributed in the UK by Falcon Foodservice, the ovens, have a host of features to withstand rough seas. These include fixed feet to secure - or even weld - the appliance to the floor, stoppers on each shelf to prevent trays and pans from sliding, and pumps to hold the oven door in an open position.
All are built to operate off a special marine voltage to USPH (United States Public Health) requirements.
The ovens use Eloma's Multi-Eco System to save on-board resources by reducing water consumption by up to 40% and energy consumption by 15%. This is achieved by recycling waste heat through a heat exchanger that warms incoming cold water to temperatures as high as 85°C.
At the same time, the live steam feature common to all Eloma ovens does away with the need for a traditional boiler and draws only the quantity of water required.
These modifications are available on all Eloma combis in any size, including the Genius range with a colour-coded control system that can store up to 300 programs, Multimax cookers, which offer Genius performance with a more hands-on control system, and the Joker line that offers full-size features in compact unit.
