The five-AA-star hotel has undergone a major investment under the Murrays in the last few years
Sir Andy and Kim Murray’s Cromlix hotel in Dunblane has begun building work on its new 80-cover restaurant ahead of its planned opening next year.
The restaurant will sit alongside the wall of the five-AA-star hotel’s main lawn overlooking its 24-acre estate and serve produce grown in its kitchen garden.
Its design (pictured below) will include a living sedum roof covered with vegetation, weathered steel and a circular entrance designed to make guests feel closer to nature.
Executive chef James Mearing, who joined Cromlix this year and previously led the three-AA-rosette Summer Lodge Country House Hotel and Restaurant in Dorset, will oversee the new project.
Cromlix is open as normal while the initial work takes place but will close from January to the end of April 2026 to undertake works within the main hotel building.
Kim Murray said: “I’m really excited about this next phase for Cromlix. The Glasshouse, our current restaurant, has been doing really well and is fully booked most of the time, but the space lacks a bit of personality and doesn’t deliver aesthetically in the same way that the rest of the hotel does.
“We appointed a [chef Mearing] earlier this year and he’s doing a great job, and it will be fantastic for him to put his stamp on this new food experience at Cromlix.”
Doune-based Kings Group is overseeing the construction work on the new restaurant, which will create jobs for up to 65 local people.
The Murrays bought the hotel in tennis star Andy’s hometown for almost £2m in 2013 and took on a more hands-on role running the business in 2023.
Cromlix has 16 bedrooms, a self-catering lodge and is situated in 24 acres of private grounds.
Kim oversaw a complete refurbishment of the hotel in 2023, and planning permission has been granted for nine woodland cabins and the creation of a wellness cottage in its grounds.
The hotel saw losses narrow to £369,045 in the year ended 31 March 2024, compared to a loss of £919,572 the previous year. A spokesperson told The Caterer Cromlix had seen an “exceptional 12 months” in 2024 with ongoing high occupancy rates and a busy restaurant and events business alongside the continued investment.
