The pub will undergo a light refurbishment before relaunching under its new guise
Tom Kerridge’s Butcher’s Tap & Grill in London is to relaunch as a new pub overseen by the former head chef at the two-Michelin-starred Hand & Flowers.
The new concept will be called the Chalk Freehouse and will be led by Tom De Keyser, who won The Caterer’s Acorn award in 2018 while head chef at the Coach in Marlow.
It was announced last week that the Butcher’s Tap & Grill will close on 1 June after two years of trading amid a “challenging climate”.
The site will undergo a light refurbishment following the closure, before relaunching on 16 June as the Chalk Freehouse.
The revamped sister is described as a a sister pub to Kerridge’s Hand & Flowers in Marlow.
It will offer drinks and snacks in the bar and garden area, while a 60-cover dining room and 10-seat private room will offer a more formal dining experience.
The pub will serve a three-course menu for lunch and dinner described as exemplifying “the beauty of a British gastropub done well”.
The menu will begin with snacks (£5.50 - £16) and starters (£9 - £19.50) including cheese and onion scone with whipped mustard and herb butter; and the Hand & Flowers’ chicken and duck liver parfait with poultry jelly and apricot chutney.
Mains will range from £21 to £31.50 and include curry roasted baby chicken with braised butter beans and preserved lemon; and pork chop schnitzel with smoked bacon cabbage and a fried duck egg.
A set lunch menu will offer two courses for £18.50 or three courses for £25.
De Keyser said: “I’m so excited to be taking on the next stage of my career within the Tom Kerridge Group and opening a new site. Tom has taught me so much about proper gastropub dining and what it is to create truly brilliant food within the context of a pub menu – I can’t wait to bring everything I’ve learned to Chelsea for the Chalk’s opening.”
Kerridge added: “It’s great to see Tom opening his first standalone site – it’s a true celebration of all the hard work and dedication he’s put into his career so far. I can’t wait for the doors to open.”
De Keyser will be succeeded as head chef at the Hand & Flowers by Sarah Hayward, current head chef at the Coach who was crowned Michelin Young Chef of the Year in 2023.
Lourdes Dooley, general manager of all three of Kerridge’s Marlow venues, will also support the London opening.
