Evolv Collection plans to turn the Farringdon and Bloomberg Arcade sites into Sartoria restaurants as it continues the development of the brand
The Evolv Collection has acquired wine bar group Vinoteca and plans to re-position its two sites as part of its Sartoria group of restaurants.
The Farringdon and Bloomberg Arcade venues will be integrated into the Evolv Collection’s portfolio, as it continues its fast-paced development under chief executive Martin Williams.
Since joining the group, which formerly operated as D&D London, Williams has been pursuing a strategy of developing key brands within the group, including Bluebird, Stories, Sartoria and Chophouse and Tavern.
The two new sites will become extensions of the Sartoria brand, serving small plates accompanied by an extensive wine list. They will join the brand, originally founded by Sir Terence Conran, that now includes the flagship Sartoria on Savile Row, the Former Fiume restaurant in Battersea, along with a new Sartoria in the former Launceston Place site that will open in November.

“Vinoteca’s expertise in wine and neighbourhood dining aligns perfectly with our vision for Sartoria’s evolution. This strategic move allows us to introduce the elegance of Milanese dining to new audiences across London, whilst honouring what makes Vinoteca special."
Each Sartoria restaurant will focus on Milanese cuisine but with a varied small plate concent. Vinoteca di Sartoria in Farringdon will showcase cucina piccolo – small plates inspired by Sartoria Launceston Place’s lunch menu - while Sartoria Battersea will combine the small plates offering with artisanal pizza. Sartoria Liverpool Street, which will open in January 2026, will operate as an all-day destination.
