The made-to-order sushi group has just secured a flagship restaurant in central Cambridge
The co-founder of made-to-order sushi chain Sushi Co has said it is aiming to grow to 30 sites by the end of 2025.
The group will open a flagship restaurant in Cambridge city centre this autumn, taking over the former site of Patisserie Valerie.
Co-founder Raheel Choudhary said he expected the upcoming restaurant to become “one of our busiest stores”, given the large student population in the area.
The Sushi Co has entered a period of expansion as it waits on sites in Tower Bridge, Brighton and Basildon, all of which are currently under construction.
The group also secured a lease in Walthamstow, while three more openings in the South East are in legals.
Choudhary said: “This means we will have 30 restaurants open by the end of 2025. Our goal is to become the leading fast-casual sushi brand based on customer experience, digital innovation and operational excellence.
“Our experienced team supports our franchisees, enabling us to take our fresh in minutes proposition to even more customers across the UK, and we are on target to open 100 UK stores by the end of 2030.”
He added that Sushi Co is continuing to recruit experienced QSR professionals as franchisees.
The Sushi Co currently operates close to 20 sites, primarily across London and the South East.
