Super-compact combi

Convotherm has launched the mini pro compact combi oven, measuring just 19.6” wide. The oven is designed to deliver high-throughput cooking while minimising energy use, labour and space. It features AI-powered ConvoSense, which automatically detects the food placed inside and launches the corresponding cooking program, without staff input, as well as Solid-to-Liquid (S2L) Cleaning and the new AirFlowPro circulation system, which increases airflow volume and speed for fast, accurate results. The CavityMax chamber accommodates both GN and US sheet pans, while the new EasyRack system adds another shelf to boost capacity by 25%.

Take steam cooking front of house

Hubbard Systems is supplying the KH1 Pro Multi-Eco condensation and smoke hood system, designed to work with the Eloma Joker combi-steamer. Used together, the system combines the functions of a condensation unit and air filtration system without additional ventilation, preventing steam and grease particles from being released, making it perfect for use front of house. The KH1 Pro has the same footprint as the Joker and both systems integrate, allowing them to operate as one.

Scratch-resistant cookware

The Tri-Shield pans are available in three sizes (20cm, 24cm and 28cm), and are made from stainless steel and aluminium. The pans feature a special triangular coating that provides a scratch-resistant surface, making it safe for use with metal utensils and offering rapid and even heat distribution for uniform cooking.

Dual-temperature pizza oven

Sveba Dahlen has unveiled the Pizza Vichinga electric pizza oven. The oven, supplied in the UK by Jestic Foodservice solutions, offers a dual-deck, dual-control design that allows chefs to bake up to 12 Neapolitan pizzas simultaneously at two temperatures. The upper deck is capable of reaching 500°C, producing a leopard-spotted dough and ‘cornicione’, or raised crust edges, in as little as 60 to 120 seconds, while the lower deck heats to 350°C for a traditional consistently baked pizza. The oven takes between 30 to 45 minutes to heat up and its turbo function rapidly restores temperature after door openings, making it suitable for high-volume service.

The Ceranoa range, available in the UK via Signature FSE, features an aluminium base and an easy to clean ceramic sol-gel coating as well as being free of PFAS (per- and poly fluoroalkyl substances).
