Firmdale is celebrating its 40th anniversary in the form of a specially designed gin cocktail with a floral twist
Ruby Rascal is a classic gin cocktail with raspberry and elderflower flavours, created by Chai Thopsi, bartender at the Refuel bar within Firmdale Hotels’ Soho hotel in central London.
The recipe combines bright botanicals with raspberry purée and a sparkling splash of raspberry soda, a celebratory sip crafted to celebrate Firmdale’s 40th anniversary.
Combine all of the ingredients, except the raspberry soda and lemon zest, in a shaker or jar. Refrigerate for 12 hours to allow the flavours to infuse before straining the liquid through a muslin or coffee filter to clarify.
Fill a rocks glass with cubed ice and pour in 80ml of the infused mixture. Stir for 30 seconds to chill and blend.
Top up the glass with raspberry soda and finish with a twist of lemon peel to garnish.
