Krzysztof Dudkowski moves from the Fife Arms to the Three Chimneys as general manager

The Three Chimneys on the Isle of Skye has appointed Krzysztof Dudkowski as general manager.

Dudkowski has joined the award-winning restaurant with six bedrooms in Colbost from the Fife Arms in Braemar, where he spent two and a half years, initially as food and beverage operations manager and then as operations manager.

Originally from Poland, he began his career in Scottish hospitality working for IHG Hotels & Resorts in Edinburgh and later moved to Ken McCulloch's Dakota hotel in Glasgow.

In his new role, Dudkowski will work closely with head chef Scott Davies, who has been at the Three Chimneys since 2015.

The restaurant, which was acquired by Gordon Campbell Gray's Wee Hotel Company in April 2019 holds three rosettes and five gold stars in the restaurant with rooms category from the AA. The business was previously owned by Shirley and Eddie Spear for 34 years.

Campbell Gray said that the Three Chimneys has been consistently full for lunch, dinner and bedrooms since reopening following lockdown: "If we receive a cancellation, we can immediately fill it from our waiting list.

"We're delighted that Krzysztof and has family have joined us on Skye as we plan for the next chapter in the life of the Three Chimneys."

Campbell Gray launched the Wee Hotel company as a vehicle for a collection of small properties offering authenticity and indigenous ingredients across his native Scotland. The group also includes the 12-bedroom Pierhouse Hotel and Seafood Restaurant in Port Appin, Argyll.
