He replaces Chace Lovecky, the founder of Clove Club-backed Two Lights in London’s Shoreditch
Nick Grieves has been named head chef at Tom Sellers’ Dovetale in London’s Mayfair.
He replaces Chace Lovecky, who was formerly head chef at Clove Club in London’s Shoreditch before founding Clove Club-backed neighbourhood American restaurant Two Lights, which is now home to Bar Valette.
Grieves brings with him over 14 years’ industry experience, having started out at the Garden House Inn gastropub in Durham, where he later became chef and owner. He then worked as a chef de partie at Simon Rogan’s Fera in Claridge’s as well as the River Café in London’s Hammersmith.
In 2016, Grieves opened his own restaurant, the Patricia in Newcastle, which was listed in the Michelin Guide, and in 2023, he opened his second restaurant, modern French bistro Ophelia. Ophelia closed suddenly in September last year, while the Patricia also appears to have closed.
Grieves joined Dovetale in October and has been head chef since January. He works alongside executive chef Tom Anglesea and chef Tom Sellers.
Sellers opened Dovetale within the 1 Hotel Mayfair in May 2023, which offers an à la carte menu with dishes cooked over a grill, alongside a raw bar and knickerbocker glory trolley.
