The two-Michelin-starred London restaurant has promoted sous chef Ben Miller to the role of head chef
Alex Dilling at Hotel Café Royal’s sous chef Ben Miller has been promoted to the role of head chef at the London restaurant.
Miller’s promotion follows the departure of executive chef Pierre Minotti to Orrery earlier this month.
Miller has worked as sous chef at the two-Michelin-starred restaurant in London’s Mayfair for over two years, prior to which he worked at the two-Michelin-starred Clove Club in Shoreditch.
The Canadian-born chef started his career in the industry aged 15, working at a catering kitchen in British Columbia. He completed formal training at SAIT Polytechnic in Alberta before working as a sous chef in Vancouver’s West Restaurant and later as chef de cuisine at Tableau within the city’s Loden hotel.
He also has a decade of culinary competitions under his belt, including winning the 2024 S.Pellegrino Young Chef Academy UK national final and the Acqua Panna award for connection in gastronomy, alongside becoming a 2024 Roux scholarship national finalist.
He started his career in the industry aged 15, working at a catering kitchen in British Columbia in Canada. He completed formal training at SAIT Polytechnic in Alberta before working as a sous chef in Vancouver’s West Restaurant and later as chef de cuisine at Tableau within the city’s Loden hotel.
A statement from the Mayfair restaurant said Miller’s appointment "signals continued evolution for the restaurant, building on its two-Michelin-star success while nurturing the next generation of culinary excellence".
Dilling opened his eponymous restaurant in September 2022. It was awarded two Michelin stars at the 2023 Michelin Great Britain & Ireland ceremony - less than six months into opening.
