Lee Westcott to kick-start guest chef rota at new Revolve restaurant

A rotating line-up of leading chefs will showcase their talents at a new restaurant in the heart of the City of London.

Revolve will open at 100 Liverpool Street, adjacent to Liverpool Street Station, with Lee Westcott, formerly of Michelin-starred Pensons at the Netherwood Estate, Herefordshire, and the Typing Room at the Town Hall hotel, Bethnal Green, providing dishes for the first menu.

Other confirmed chefs, who will write menus and hold ticketed events on a monthly basis, include Josh Eggleton of the Pony Restaurant Group; Gareth Ward of two-Michelin-starred Ynyshir restaurant and rooms, mid-Wales; and Anna Hansen, formerly of the Modern Pantry, London.

Revolve is set to open in the spring and has been created in partnership with property development and investment company British Land.

Tris Hillier, chief executive of Revolve, said the restaurant will combine culinary excellence with the "buzz, excitement and energy" of the classic brasserie. "We wanted to create a local brasserie with heart, soul and vibrancy, where everyone could enjoy wonderful wines and exceptional food, but importantly, we also wanted some flexibility to invite our industry chef friends down to showcase their talents."

Alice Keown, leasing director – restaurants and leisure at British Land, added: "As workers continue to return to offices, [Revolve will] provide the perfect place to catch up with colleagues during the day and friends in the evening."

Two more restaurants will open alongside Revolve at 100 Liverpool Street in the summer: Stem & Glory, a vegan bar and restaurant, and the UK's first Shiro from Hong-Kong-based contemporary sushi restaurant by Aqua Group.
