The Beatles meets Scottish strawberries in this bittersweet recipe ready for summer
This summertime cocktail was created by Matilda Tsappis the co-owner of Killiecrankie House in Perthshire, Scotland.
The fine dining restaurant uses the surfeit of strawberries in its kitchen garden to create a riff on a sbagliato, for a moreish bittersweet number.
Guests can enjoy Strawberry Feels Forever an aperitif in the garden before the venue’s tasting menu, or after dinner during long, bright evenings.
Infuse the strawberries in the sweet vermouth and Campari for a few days (or at least overnight). Add 50ml of the chilled strawberry infusion into a champagne flute, and top up with Prosecco. Garnish with an infused strawberry.
