Sparkling herbal bitterness brings a refreshing start to the year
The Wildflower Highball is a zingy, herbal serve created by Cyril Francoise, head of bars for Soho House in the UK and Asia, as part of the brand’s refreshed low and no cocktail programme.
The recipe uses Seedlip Garden’s complex, herbal flavour profile, inspired by an English garden and featuring notes of peas, hay, spearmint, rosemary and thyme. This is teamed with bittersweet and citrusy Botivo, which somewhat replicates vermouth and delivers balanced bitterness with aromatic notes and a tangy finish.
Fill a highball glass full of ice cubes. Add all the ingredients, finishing with the soda water, and stir. Garnish with a lemon wedge.
