It comes after the chef was appointed culinary strategist at the 106-bedroom luxury hotel
Chef Michael Caines is to open his first London restaurant, Michael Caines at the Stafford, on 17 September.
Last month, Simon Ulph of Lympstone Manor joined the luxury hotel as its executive head chef ahead of the launch of the flagship restaurant.
Michael Caines at the Stafford will take over the former site of Game Bird and focus on produce from across the British Isles.
The move comes after Caines was appointed culinary strategist at the 106-bedroom property in April, following the addition of Lympstone Manor in Devon to the Stafford Collection.
The à la carte menu will include dishes such as Stafford beef wellington and Brixham Dover sole, while the signature tasting menu will feature warm lobster salad with cardamom vinaigrette, pan-roasted Brixham turbot and shellfish chowder.
John McLean, managing director at the Stafford Collection, said: “We are incredibly proud to partner with Michael Caines on his first London restaurant. Michael Caines at the Stafford represents a natural evolution for our hotel, bringing together our rich heritage with Michael’s culinary excellence and vision.
"This collaboration reflects our continued commitment to offering unforgettable experiences for our guests, and we look forward to welcoming guests to enjoy something truly special in the heart of St James’s.”
Caines added: “I’m absolutely thrilled to be bringing my cuisine to the Stafford, an iconic London destination that shares my passion for excellence and warm hospitality. This new restaurant is a celebration of British seasonal produce, and I can’t wait to share our vision with guests in the heart of St James’s.
"Together with my executive head chef Simon Ulph and the talented team at the Stafford London, we have been shaping the dining experience together over the past few months in readiness to welcome our guests this September.”
The Stafford London dates back to 1912 and also features four private dining rooms, a 400-year-old wine cellar and the American Bar.
