His appointment comes soon after Lisa Goodwin-Allen’s departure from Northcote, another Stafford Collection property
The Stafford Collection has appointed chef Michael Caines as culinary strategist for the Stafford London hotel.
The chef will oversee the direction of the Game Bird restaurant and American Bar, as well as the broader F&B offering at the 106-bedroom hotel.
His appointment comes soon after Lisa Goodwin-Allen announced her departure from Northcote, another Stafford Collection property, after 23 years at the Michelin-starred hotel and restaurant.
Caines currently operates the Michelin-starred, five-AA-rosette Lympstone Manor restaurant and Pool House restaurant at his flagship Exmouth hotel, which he opened in 2017.
In October last year, the Raymond Blanc, Joël Robuchon, and Bernard Loiseau-trained chef closed Mickeys Beach Bar & Restaurant and Café Patisserie Glacerie at the Sideshore in Devon.
Caines said: “I am thrilled to be joining the Stafford London and honoured to be part of this exciting new chapter. It feels like a natural fit for me, having worked in luxury five-star hotels from early on in my career. I am looking forward to working with the exceptional talent that makes up the team within the hotel, and together delivering unforgettable culinary experiences.”

The independently-owned Stafford Collection spans the Stafford London, Northcote in the Ribble Valley and Sicilian restaurant Norma on London’s Charlotte Street.
The Caterer understands Caines will support the Stafford Collection’s broader portfolio as required.
