What was your best subject at school?

Languages, mainly Spanish

What was your first job?

Paper boy

What was your first job in catering?

Kitchen porter at Chelsea Wine Bar in London

What do you normally have for breakfast?

Black coffee by the gallon

What do you do to relax?

With three kids and a busy restaurant to run, relaxing is often a pipe dream. When I do, it's exercising or playing sport followed by watching sport

Which is your favourite restaurant?

Trullo – but if that's cheating, I had the most amazing meal at Al Gatto Nero in Venice

What's your favourite hotel?

Six Senses, Ibiza

What is your favourite drink?

Guinness

Which person in catering have you most admired?

The chefs who I have worked with. It's an incredibly difficult job that is unforgiving. To see chefs come in day after day and perform regardless of what's going on in their lives is an extremely admirable quality

Which person gave you the greatest inspiration?

My current business partners, Tim Siadatan and Jordan Frieda. To be so young and open a restaurant with such ambition and integrity was inspiring to say the least

White truffle with a slicer

Describe your ultimate nightmare?

I'm a Celebrity Get Me Out of Here

When and where was your last holiday?

Depends on whether or not you class travelling round the Tuscan countryside tasting some of the best olive oil and wine in the world as a holiday…

What irritates you most about the industry?

Restaurants that talk about how amazing a tomato is rather than the people who work for them and how amazing they are

When did you last eat a hamburger?

Last Friday – Five Guys isone of my favourite restaurants

What is your favourite prepared product?

Any kind of hot sauce

If you had more time, what would you do?

Cook more interesting things for my children to eat
