Banana and caramel offer cold comfort, combined with a spiced hit of rum

This cocktail was created by Jasmine Peen, assistant manager at the Leven hotel in Manchester.

 

It is inspired by Peen’s childhood family holidays to Hong Kong, where her parents originated. There, she would order Bananas Foster, a traditional and homely American dessert of ice-cream topped with flambéed bananas and caramel that is also popular in Hong Kong.

 

Bananas Fostered pays homage to her childhood favourite by pairing sweet and spicy elements with a citrus and fruity finish.

 

Ingredients

  • 25ml Salford spiced rum
  • 25ml Joseph Cartron banane liqueur
  • 15ml Monin cinnamon syrup
  • 15ml Monin caramel syrup
  • 25ml fresh lemon juice
  • 25ml cloudy apple juice
  • Banana chips for garnish

Method

Shake and strain all the liquids into a rocks glass with ice. Garnish with banana chips.
