The Greek Paloma was created by Alex Large, co-founder of eastern Mediterranean restaurant chain Brother Marcus.

 

The Greek Paloma gives the classic Paloma recipe a twist with the addition of herbal mastiha liqueur, made from the resin of the mastic tree, which grows on the island of Chios, the fifth largest Greek island.

 

It’s a long cocktail that’s easy to drink and looks attractive, with pink rose liqueur to give a touch of sweetness contrasted with a sumac salt rim.

 

Ingredients

  • 45ml Rooster Rojo tequila
  • 10ml Roots mastiha
  • 10ml Briottet Pamplemousse Rose liqueur
  • 10ml homemade peppercorn syrup
  • 10ml grapefruit juice
  • 85ml Three Cents pink grapefruit soda

Garnish

  • Sumac salt
  • Pink grapefruit slice

Method

Rim the edge of a highball glass with sumac salt.

 

Shake the tequila, mastiha, rose liqueur, peppercorn syrup and grapefruit juice together and pour into the glass.

 

Top up with Three Cents pink grapefruit soda and fill with ice.

 

Garnish with the slice of pink grapefruit.
