The couple behind the Michelin-starred Paul Ainsworth at No6 in Padstow acquired the 21-bedroom hotel in January 2025
Paul and Emma Ainsworth are to reopen the St Enodoc hotel in Rock, Cornwall, on 27 July.
The opening comes roughly 18 months after the couple acquired the 21-bedroom hotel overlooking the Camel Estuary from Robert and Carol Barkwell, who owned the property for around six years.
The newly launched St Enodoc hotel has been designed by Emma and her friend and interior designer, Eve Cullen-Cornes, and will include two new restaurants from Paul.
The Estuary Grill will showcase the best of Cornish land and sea, using products from Philip Warren Butchers and Flying Fish. Daily market price specials, such as prime ribs, sirloin and whole fish, will be cooked over an Asado grill, while classic dishes taking inspiration from Paul’s Seychellois heritage will also be available.
Meanwhile, the Flour Garden, an all-day, family-friendly restaurant operating between March and October, will serve hand-stretched Neapolitan-style pizzas, Panzanella and Niçoise salads, as well as home-made soft serve.
Guests will also be able to gather at the St Enodoc Bar, which will serve Guinness on tap, as well as lagers from Sharp’s Brewery and Monte Carlo beers from entrepreneurs Antho Orengo and Will Scheffer in collaboration with Molson Coors. A selection of cocktails and spirits will also be on offer.
St Enodoc features two function spaces: the Oyster Salon, which can accommodate up to 100 guests for weddings and corporate events, and the Porthilly Pavilion for civil ceremonies, private parties and wellness activities.
There are further plans to refresh the bedrooms and add a gym and wellness centre.

We want St Enodoc to be a place for everyone to enjoy, whether you’re staying locally, travelling from afar or living around the corner.
“With the most incredible views, in a place that means so much to Emma and me, our ambition is for St Enodoc to become a year-round destination, not just for those of us who love Rock and Cornwall, but for visitors from across the UK and beyond to enjoy.”
After opening the Michelin-starred Paul Ainsworth at No6 in Padstow in 2011, the Ainsworths have grown their collection to include CiCi’s Bar, Padstow Townhouse hotel, Caffè Rojano and the Mariners pub, also in Rock.
