He joins as culinary director to oversee the relaunch of the Ganymede as the Elizabeth
Anthony Demetre has joined forces with Hubert Beatson-Hird of the Lunar Pub Company to relaunch the Ganymede gastropub in London’s Belgravia as the Elizabeth.
Situated in a Grade II-listed Victorian townhouse, the Elizabeth will seat 52 covers and feature a 12-cover terrace once it opens on 16 September. A 36-cover private dining room will also be available.
Demetre is famed for having founded Arbutus in London’s Soho in 2006, which was followed by the launch of Wild Honey in Mayfair and the Michelin-starred Wild Honey St James in 2019.
The culinary director has partnered with chef David Halewood to create a menu of bistro classics and Sunday roasts at the Elizabeth, ranging from whipped cod’s roe, duck, pork and guinea-fowl terrine to roast young chicken lacquered with lemon and honey.
The drinks list will also include Axia Watermelon Spritz, a Porto Tonico and the Huntress Negroni.
Beatson-Hird, founder of Lunar Pub Company, said: “After three wonderful years of Ganymede we wanted to reimagine our beloved Belgravia site to reflect the fast-changing hospitality environment. When the opportunity to work with Anthony emerged, the choice became a no-brainer to work together to create a modern take on British hospitality and gastronomy.”
The Lunar Pub Company also operates the Apollo Arms in London’s Clapham Old Town.
