Anthony Demetre will launch a bistro at his Michelin-starred restaurant Wild Honey St James on London's Pall Mall this weekend (from 27 April).

Bistrot at Wild Honey will serve a seasonally changing menu and a wine list with a strong French emphasis.

The bistro will offer a selection of snacks, including charcuterie, croquettes, Maldon oysters and cheeses as well as an à la carte menu.

Main courses will include ricotta dumplings ‘gnudi' with Parmesan velouté; Cornish skate, brown butter, parsley and lemon; whole young chicken lacquered with honey and preserved lemon; and steak frites (Herefordshire bavette) with peppercorn sauce.

A plat du jour, such as slow-cooked pork with petit salé lentils, shallots and parsley, will also be offered.

Bistrot at Wild Honey will offer more than 25 wines by the bottle, carafe or glass, alongside a number of signature cocktails, including Demetre's take on a Negroni.

The bistro will be open daily from noon to 10.30pm (Sunday 9.30pm).

Demetre relocated his Mayfair restaurant Wild Honey to the Sofitel London St James hotel in 2019, combining classical French techniques with seasonal British produce.

His career began at Lucknam Park in Colerne, Wiltshire, before he took on a role of pastry chef to Gary Rhodes at the Castle in Taunton, Somerset. He went on to work at the Greenhouse, London, before going on to work with Bruno Loubet, eventually winning a Michelin star for London's Putney Bridge restaurant.

He then graduated to the role of restaurateur when he embarked on a highly successful business partnership with Will Smith, opening Arbutus in Soho in 2006 followed by Wild Honey in Mayfair in 2007 and Les Deux Salons in 2010.

Demetre and then business partner Smith won the the Restaurateur of the Year – Independent Catey in 2008.
