The Edinburgh pizzeria comes as the Neapolitan pizza group enters a period of “measured, sustainable growth”.

Neapolitan pizza group Pizza Pilgrims has confirmed the opening date for its first Scottish restaurant and largest site outside of London.
Pizza Pilgrims will be launching on Edinburgh’s Rose Street on 14 April following a week-long soft launch period from 7 April.
The 4,349 sq ft site is spread across two floors, offering 191 covers in total, including a 45-seat outdoor terrace.
A dedicated events space on the first floor will host pizza masterclasses for groups of between 10 and 60 people, as well as a series of pub quizzes, live music and drag nights. It can also be hired out for private dining.
The launch will create 35 positions across front and back of house, led by general manager Robert Turnball, an industry veteran with over 25 years’ experience.
The B Corp-certified business announced in July last year that it has entered a period of “measured, sustainable growth” through “robust operational processes and risk management strategies”.
Founders Thom and James Elliot said: “We couldn’t be more excited to finally bring Pizza Pilgrims to Edinburgh. Rose Street is packed with incredible bars and restaurants, and we’re looking forward to becoming part of such a buzzing hospitality scene.
"This is our largest opening outside of London with a space that can do it all. From Pizza masterclasses, private events, group dining and a stage, we want to support Edinburgh’s thriving entertainment scene!”
The Elliot brothers founded Pizza Pilgrims in 2012 and opened its first regional site in Brighton in 2022.
The group operates 25 sites across the UK, serving pizza using its signature 72-hour double-fermented dough.
