Mollie’s is planning to open a 200-bedroom site close to Edinburgh Park Station in 2028
Mollie’s motel and diner is set to open its fourth property in Edinburgh in 2028, subject to planning permission and licensing.
The hotel and diner has exchanged contracts with developers Parabola to build a new site close to Edinburgh Park Station.
The Edinburgh Park property will span roughly 73,000 sq ft and feature around 200 rooms, a diner with an outdoor terrace, meeting and events spaces, and car parking with electric vehicle charging stations.
The development coincides with City Plan 2030, Edinburgh’s local development plan, which is aiming to transform the Edinburgh Park and South Gyle area into a business-focused, mixed-use district.

Mollie’s was founded by former Soho House chief executive Nick Jones, initially launching under the Soho House brand prior to being spun off in 2020 as an independent entity.
Inspired by the classic American motels and diners, the brand became a certified B Corp business in October 2024.
Mollie’s currently operates motels in Bristol and Oxfordshire, with a Manchester city centre location set to open later this year.
