The start of a year-long festival of Japanese culture, launched in London in May is set to give another boost to our current taste for Japanese food, believes Kikkoman, the world's largest manufacturer of soy sauce.

For proof, think sushi - one of the hottest trends around - or just look at the increasing number of dishes on the menu featuring tempura, teriyaki or yakitori-style cooking.

Kikkoman is ideally positioned to take advantage of the growth of interest in Japanese foods with the expansion of its catering range of cooking and dipping sauces based on its flagship naturally brewed soy sauce.

Bing-Yu Lee, general manager of Kikkoman's UK operation, says: "We are the only producers of naturally brewed soy sauce with no additives or preservatives that is in widespread distribution. We attribute our growth outside Japan to consumer demand for an authentic product with an authentic taste."

The company's core product, Naturally Brewed Soy Sauce, made from just four ingredients - soybeans, wheat, salt and water - is now available in 1.25 litre PET bottles to suit kitchens where glass is now considered a hazard.

The existing 500ml and 1 litre glass bottles remain available to give caterers a choice. For added convenience, Kikkoman Naturally Brewed Soy Sauce can also be ordered "on tap" in a 5-litre bag-in-box format.

The award-winning 150ml dispenser bottle, packed in cases of 12, is also available to sit on tables and counter tops for easy use by customers.

Teriyaki Marinade, a blend of naturally brewed soy sauce, wine and spices particularly suited to barbecue food, is increasingly being used as a year-round marinade by chefs who appreciate the subtle but distinctive flavour it gives to meat, fish and vegetables. Kikkoman Teriyaki Marinade is available to caterers in a 4 litre bag-in-box plus 250ml bottles.

Kikkoman has been producing the naturally brewed soy sauce for more than 300 years. Kikkoman sauces and marinades have no chemicals, colourings, additives or preservatives.

The rich, full flavour which complements rather overpowers food comes from the lengthy fermentation process, says the company.
