A royal Hungarian meal

IT was a royal occasion at the one-AA rosette Compleat Angler hotel in Marlow, Buckinghamshire, when head chef Alan Swinson created a traditional Hungarian meal for the Queen, Prince Philip, Prince Charles and the Hungarian president, Arpad Goncz last month.

Swinson created a four-course meal with the help of Kuti Ferenc, chef at the Hungarian Embassy. This included cold foie gras with stuffed tomato, apple marinated in wine and Hungarian plum jam, clear goulash soup, turkey breast Hortobàgy-style, spinach strudel, cottage cheese gnocchi, baby corn in bacon, and cauliflower gratin, followed by Charlotte Royal.
